Grilled Salmon with Black Raspberry Sauce

Grilled Salmon with Black Raspberry Sauce

Simple and delicious!

INGREDIENTS

1 Salmon Wild Salmon Fillet, cut into 4 pieces
2 Cups of Black Raspberry Jam
1/2 cup Butter Substitiute
2 Tablespoons Honey
Sriracha Hot Sauce
Worchestershire
Zest of 1 Lemon and Juice from 1/4 Lemon
Salt, Pepper, Olive Oil
Prepare coals to Medium High Heat. Pat Salmon dry and lightly drizzle with olive oil, and then salt and pepper to taste. Over medium low heat, with whisk in hand, melt Jam with the butter and honey, stirring very frequently and adjusting heat to a low simmer. Add a splash of Worchstershire and 1 Tablespoon of Sriracha (or more, to taste) and the zest of 1 lemon. Simmer and stir for 5 minutes or so to combine flavors. Strain seeds and return to pan to keep warm, but not simmering.

Place the salmon skin side down onto meduim coals. Flip after 2 minutes, remove the skin and cook for an additional 2 minutes.  Return sauce to heat and add a squeeze of lemon juice. Taste to adjust seasonings. Serve along side the Salmon!

This is a picture of my cousin Myrtle and me when we were little. We were touching paws in my kitchen and hoping that no one was looking, even though Grandma's was standing there and my Mom had the camera ready to shoot. No wonder I don't pose for the camera. Never ends! This is one of my favorite pictures because everyone was showing off their feet! I will miss Myrtle very much. I am happy for her because she will be in a happy place with Grandma. Sweet dreams to you beloved Myrtle. xxoo

That Guy really likes to cut the grass. Sometimes he comes home from work & pretends to do it.






I haven't had the chance to write in such a long time! My parents went to Rhode Island for a wedding and for some reason my cousin Sara decided to sleep at my house while they were gone! She must have thought that living with me was really fun. She kept trying to take me to her house, but I didn't let her. I "marked" her back tire just to let her know who the boss is around here, and then I went back to my couch.
Not to be outdone, she went out and got a Dog of her OWN!
This is a picture of her with the new puppy.
They named her Cally.

Mom just posted on Twitter- looking for a change from ProMeris for flea and ticks. The stuff has to work because we live in the woods with Bambi in our front yard all of the time. No offense to ProMeris- but it is too skinky- even for me! I hope that we get lots of DMs or Email messages with good advice! Beautiful Day for Flowers!


This beautiful bouquet was sent to us from my Aunt Janet yesterday. She's pretty!
My cousin Tommy is staying with us this week. He is 13 years old and we are having a bunch of fun. He likes to run around all of the time and eat food. Me too!
Still NO WORD about Mom's job with Murphy Goode. She's been sampling all of their wine!
